Bunny Cake
“Where’s the Bunny Cake?” For my family this was my refrain when I crossed the threshold to my grandparents’ house every Easter in Massapequa, NY. After the two hour trek from Connecticut, my eyes blurred from the glare of a Gameboy in the backseat, I immediately needed to know where the main event was. Simple in construction, it contained multitudes of joy. A white cake base, covered in a delectable layer of whipped icing, gave it a full appearance of fluff. From there, a layer of coconut shavings finished the bunnies’ fur. Then, the treat on the treat, the candy, usually jelly beans, M&Ms, chocolate syrup or Twizzlers, that adorned the cake and brought the personality to life.The power of my grandparents baking brought us together in ways we could never foresee and established a legacy. The Bunny Cake, and the baking behind it, now represents communal joy. While the current generation has scattered across the East Coast and Midwest; family baking brings us together. The Bunny Cake became a challenge I would take on for myself and share with my own daughter, leading to her echoing cries across history to make.. the.. cake!As my children grow, it has become important to pass on the tradition, from the early years of awe to now being part of the process. We bake together to stay together.While our whole family is unable to commune physically, the shared pictures of each Bunny Cakes every Spring bring us back together through communal confectioning.
